Bojangles is a restaurant chain serving signature fried chicken, hand-made biscuits, and all-day breakfast since 1977. Now operating over 800 locations, Bojangles has ambitious growth plans both nationally and internationally.

At this pivotal point for growth, the Bojangles team engaged The Moseley Group to develop FOH and BOH optimizations capable of successful, profitable growth, nationwide.

The Moseley Group worked holistically with the Bojangles team to develop the future store design with objectives to land a cost-effective, brand-fitting, forward-thinking, and highly competitive model – with improved metrics that drive increased franchisee & corporate returns


To develop a cost-effective, forward-thinking prototype with FOH and BOH optimizations, driving an enhanced guest experience and optimal franchisee and corporate returns.

Menu Optimization from Category to Ingredient Level:

We conducted a complete menu analysis across each category and SKU, finding opportunities for reduced complexity, improved quality and consistency alongside optimized performance metrics.

Prototype Kitchen Design:

Our team conducted a detailed review of different dayparts and segments in the Bojangles kitchens to gain an in-depth understanding of the current state – then provided BOH opportunities and kit-of-parts recommendations that optimized CAPEX, labor requirements, food quality, and throughputs.



Front of House Design:

Leveraging consumer data and refreshed branding, we scheduled a cross-functional team workshop to walk through several restaurant design opportunities – we gained collective inputs before finalizing a detailed design direction.

Development of the

We developed a 500+ page development manual providing the tools needed to bring the prototype to life in new build and retrofit scenarios, featuring a 3-tier remodel strategy – emphasizing ease of implementation and required investment. Every build option has a chapter that can be handed directly to a GC, allowing for rapid and standardized growth.

Development of Drive-Thru Only Prototype:

We developed the site plans, design and OPS strategy for a 2-lane drive-thru-only prototype to facilitate rapid growth into new markets. The design drives an elevated and differentiated guest experience with visibility from the car into biscuit making theater.
